IMAP gives you the ability to synchronize your email with different computers. For example, with my Gmail account, I should be able to use an email client at home to retrieve my email, then use one at work to retrieve the SAME email. In other words, if I sent an email to you, and you replied, then at home, I would receive your message. With IMAP, when I get to work, I can retrieve the exact same message. With POP, I can't.

POP looks to see if the message has already been downloaded. If it has, it won't download it again. So, if I got your reply at home, I wouldn't be able to retrieve the same reply at work. So, my email client at home will have downloaded different messages from my account than the client at work. This isn't the case with IMAP.

IMAP is the way to go for this very reason.

As for SMTP, that is just your outgoing mail protocol. It's just used for sending mail, not for downloading.
